Bring to a boil, and then lower to a gentle simmer. Add cranberries, orange juice, and saved broth with flavorful brown bits.Cook over medium heat until the apples begin to soften. Meanwhile, place grated apples, cinnamon stick, and bay leaf in a small saucepan.Add chicken broth to the sauté pan and stir to loosen the flavorful brown bits.Remove pork chops from the pan, place them on a nonstick baking sheet, and put in the oven to cook for an additional 10 minutes (to a minimum internal temperature of 160 ☏). Turn over and brown the second side, an additional 2 minutes. Add pork chops, and cook until browned on one side, about 2 minutes. Spread the apples and walnuts on top of and around the pork chops in the pan. Cook for 3-4 minutes, stirring occasionally. Cook the pork steaks for 3-5 minutes per side, turning once. Heat a cast iron skillet over medium-high heat. While pork is browning, peel, core, and chop the apples. Season both sides of the pork steaks with salt and pepper. Season the pork chops with salt and pepper and brown on both sides. In a large sauté pan, heat olive oil over medium heat. Add the ground ginger and cinnamon to the skillet and toss everything around in the skillet. Add sliced apples, broth, and 1 thyme sprig. Slowly add wine to hot skillet, stirring to scrape up any browned bits from bottom of skillet. Transfer chops to a warm platter cover and keep warm. Stir apple mixture in sheet pan, and spread into an even layer. Add chops cook 7 to 10 minutes or until 145 degrees F, turning once. Transfer pork chops to a serving platter, and cover with foil to keep warm. Chop the apples into bite-sized pieces and add them to the hot skillet. Bake at 425° for 12 minutes turn pork chops over, and bake 10 to 14 minutes more or until a meat thermometer inserted in thickest portion registers 140°. Heat the butter in a cast iron skillet at high heat. This family meal includes a wonderful fruit sauce that adds the perfect touch to these pork chops. Salt and pepper the pork chops on both sides. Place sliced apples in the bottom of a large baking dish and sprinkle with 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. ![]()
